==== Bold Text ==== Slow Cooker Roast Beef

1 large onion, sliced

1 beef roast (I used Trader Joes Santa Maria Tri-Tip roast already seasoned)

1 can beef broth

1/2 cup wine (red or white)

Place sliced onion in bottom of Crock Pot. Pour beef broth and wine over onions. Turn crock pot on high to get it hot.

In a skillet, heat 2 Tablespoons oil. Cut roast into 3 or 4 pieces. Brown roast pieces in oil, turning often, until seared on all sides.

Place seared roast pieces into broth in Crock Pot. Turn to low and cook for 6 - 8 hours.

When cooked, remove roast and cut across the grain into thin slices. Spoon onions and a little broth over the sliced meat.

The meat is great to eat just as it is, but I cut it up a bit more and served in warm tortillas with beans, rice, cheese, and season with hot sauce to taste.

Use any left over broth and onions as soup. Just add any pasta or veggies you have available.
