Mom’s Potato Soup

Makes 2- 3 large servings

Ingredients

  • 1 can chicken broth (or 2 bullion cubes dissolved in 2 cups water)
  • 2 -3 large potatoes
  • ¼ teaspoon salt
  • a few dashes of pepper
  • 1-cup cream or half & half

Instructions

Peel potatoes and cut into small pieces. Put into saucepan and pour chicken broth over potatoes. Add salt and pepper. (Add more water to cover potatoes if needed.) Cook over medium heat for about 20 mins. Potatoes should be tender when pierced with a fork or knife.

Mash potatoes with a potato masher, or fork until desired consistency (or pour into blender and blend.)

Add cream and heat through. Be careful not to burn the creamed mixture or let it boil over! Taste and season with more salt and pepper if needed.

Sprinkle with bacon bits, cheese, onions or chives, sour cream.

If you want your soup to be thicker, you can one or two things:

  1. Add instant mashed potatoes – just stir a few tablespoons in and it will thicken
  2. Thicken with cornstarch: Stir one-tablespoon cornstarch into ¼ cup cold water. Add this to your soup. Let soup come to a boil, stirring constantly.
