Quick and Easy Broiled Shrimp- great with pasta and green salad


* A bunch of Shrimp (1-2 lbs)

* 1 Red Bell Pepper, seeded and small diced

* A bunch of Garlic (6-7 cloves), small diced/minced

* 1 Lemon

* 1/2 stick of Butter

* 1/2 teaspoon Paprika

* Salt & Pepper


1. Remove shell and back vein from shrimp (you can either leave the tails on, or take off)

2. Butterfly cut the shrimp so that they are almost cut in half but still connected. Season lightly with S&P and place shrimp in an oven proof casserole/ceramic dish in a single layer(No shrimp on top of each other)

3. Preheat oven to High Broil or 500 degrees and place an oven rack near top portion of electric coils

4.In a sauce pan over medium heat combine butter, bell pepper and garlic. Season lightly with S&P

5.Cook bell pepper and garlic until aromatic about 4 minuets. Turn heat off

6. Add juice of 1/2 lemon and any lemon zest if desired

7. Taste sauce, should be sweet and tangy

8. Pour sauce over the shrimp

9. Lightly sprinkle Paprika over everything

10. Place dish in the oven and broil about 4 mins.

11. Stir shrimp around and check for doneness. All grey will disappear.

12. Remove from oven and either serve as is or over pasta. Yumm!
